It is a long-established Niigata specialty that was founded in 1922, and has a history of being dedicated to the Imperial Family five times. The clay wall, which is made by kneading cloth seaweed with the image of a different hagi soba for each room in the shop, was created by one of Japan's best clay wall craftsmen, Kōichi Namyun. The proud Hagi soba uses seaweed funori for the connection, and features a smooth throat and chewiness. The specialty is felt, such as the domestic gensoba is self-milled with a millstone, and the use of natural bonito and kelp for tsuyu. Hedge Soba 880 yen for one serving, 1628 yen for one serving.
