Kura continued to protect it for generations from the year of the Founding Bunsei. As a heirloom of his own, he has kept the germs that are suitable for brewing that have settled in the tubs and the kura, as heirloom of his own, he has been cherished for generations. As the trade name Yoshinoya Tōgemon, Tōgemon had been running a liquor store in Owari's country of Owari since the Edo period, and had been brewing about six hundred and sixty-six stones under the Hijiyama stock. They completed miso and tamari with a delicate construction that made use of their brewing techniques (Ishitaka is from the Tempo period "Owari no Kuni Sake Brewery Rice Taka Book"). The company uses domestic soybeans and sun salt to be prepared in tubs, aged for three years, and shipped as an additive-free, body-friendly product.
