The soba noodles, made fresh every morning, are fragrant and smooth, crafted in the thin ni-hachi style (80% buckwheat, 20% flour). They pair perfectly with a house-made dipping sauce made from a broth of bonito flakes and kelp, combined with a mellow kaeshi (soy-based sauce) that has been aged to enhance its flavor. The "Kakiage Tempura Seiro" comes with two generous servings of soba. The kakiage, made with sashimi-grade fresh shrimp, scallops, and Japanese spear squid (mongō ika), is crispy and satisfying.
