At the brewery in the back of the store, the whole family still makes handmade miso and soy sauce using the traditional method. It is said that miso prepared using Gujo water is aged carefully for one and a half years without any preservatives or colorants. It is characterized by the remaining grains of soybeans. In addition to miso and soy sauce, there are also vinegar, sauces and specialty original oysters.
