Komatsu Udon, which has been known as a specialty of the Kaga clan since the Edo period, was also eaten by the poet Matsuo Basho. The noodles, which are made with the underground water from the Lingpong Hakusan, have a reputation for the good taste of Tsurutsutsudodoki. A shop where you can enjoy the taste is a noodle school. It is adjacent to the noodle-making factory of the long-established udon maker Nakaishi Foods Co., Ltd. in Komatsu city, where you can taste freshly made udon noodles. Recommended is vegetable tempura udon with local vegetables 950 yen (warm 900 yen). The slightly sweet soup and freshly fried tempura are excellent. Although it is warm and cold, the original taste of noodles is better in cold. Souvenir products are also available, such as Komatsu udon noodles, a dried udon with a special noodle soup.
