Four types of soba: "Gen", which is self-milled with a power mill, and "Uchi", which is hand-grained from Yagatake, "Countryside", which is a lot of sweet skin, and "Iridani native", which is raised from six seeds. Gaoyuan soba, a tradition, is eaten with grilled miso and pungent radish from the ground soup.
