Bari Soba is a dish of thickish Chinese noodles that are deep fried and covered with a thick chicken-based soup full of baskets. The name “Bari Soba” comes from the fact that the noodles are crispy (bari bari in Japanese). Several restaurants in Yamaguchi City serve Bari Soba, which is loved as a local specialty cuisine in Yamaguchi.
