Kawara Soba Noodles

Kawara Soba is a dish of cha-soba (buckheat noodles that confit green tea, making the noodles green and giving them a flavor different from usual soba noodles) cooked on a ping hot kawara roof tile and severed with various toppings.
The noodles on top are soft and chewy while those on the bottom get nice and crisp, baked by the hot title. This allows you to enjoy the deep flavorful cha-soba with two kinds of textures.
