Sogen Shuzo, said to be the birthplace of Noto Toji. Founded in the 5th year of Meiwa (1768) by Sogen Chugo, who has roots in the lord of Nanao Castle during the Warring States period, Hatakeyama Yoshiharu. With over 250 years of history, it has combined the best techniques and knowledge, along with the spirit of artisans, to produce fine sake of the Noto Sogen style, dedicated to its hometown of Suzu. The "Sogen Kenzan," characterized by a slightly sweet, soft texture and mellow flavor, pairs excellently with Noto's local cuisine. Additionally, the "Noto no Kuni Junmai" full of rice flavor, and the limited release "Sogen Shiboritate Namagenshu" available from December to March are also recommended.

The island name "Mitsuke" is said to originate from the time when Kobo Daishi first discovered it while crossing from Sado to Noto. It is an uninhabited island measuring 150m in length, 50m in width, and 28m in elevation, and it was also called "Battleship Island" because its silhouette resembles a warship approaching the shore. Due to the Noto Peninsula earthquake in Reiwa 6, the southeastern side has collapsed significantly, changing its appearance completely. The tremendous power of the earthquake and the changes in the terrain caused by it are clearly evident, highlighting the threat of nature.
